PASTA WITH MUSHROOMS & CASHEW CREAM

Ingredients for 4 people
3-4 onions, chopped
1 clove garlic, chopped
2 tbsp olive oil
Salt
Pepper
300 g. various mushrooms, chopped
500 g. pasta
For the cashew cream
Water from the boiling pasta
150 g. cashew butter Exereton
Method
1. In a deep frying pan, add the onions, garlic, olive oil, salt, pepper and cook over medium heat for about 10 minutes until the vegetables are soft. Add the mushrooms and cook for another 10 minutes. At the same time, boil the pasta in plenty of salted water according to the instructions on the package.
2. Prepare the cashew cream. In a bowl, add the cashew butter, 4-5 tbsp. of the pasta water and mix. When the pasta is ready, scoop it out with a spoon and transfer it to the frying pan with the mushrooms. Add the cashew cream, mix and serve.
