COOKIES WITH APPLE & WHITE CHOCOLATE

Ingredients for 10 large cookies
250 g apples
50 g walnuts Exereton
50 g fresh ginger
30 g coconut sugar Exereton
30 g olive oil
10 g Ceylon cinnamon Exereton
5 g cloves
5 g cardamom
50 g raisins Exereton
5 g sea salt
250 g self-rising flour
50 g white chocolate
Method
1. Preheat the oven to 180°C. Prepare a baking pan with parchment paper. Pass the apples through the food processor and transfer them to a bowl. Coarsely chop the walnuts. Put the ginger, sugar, olive oil, spices and salt in the food processor. Grind and transfer to the bowl.
2. Add the flour and raisins and mix. The dough we will have, will stick to your hands. We wet our hands and form the cookies. Bake for about 12 minutes. Check if they are cooked with a knife or a toothpick. The cookies should be soft and fluffy.
3. Melt the white chocolate and sprinkle them.
