NOODLES WITH SAUCE FROM EXERETON PEANUTBUTTER

Ingredients for the sauce
4 cloves of garlic, finely grated
2 tsp. sweet paprika
2 tbsp. sesame seeds Exereton
2 tbsp. dried coriander powder
Zest of one lemon
1 tbsp. freshly ground pepper
180 ml sesame oil
1 tbsp. peanut butter Exereton
6 tbsp. soy sauce
2 tbsp. coconut sugar Exereton
2 tbsp. apple cider vinegar
Ingredients for the noodles
2 tbsp. sesame oil
1 onion, thinly sliced
3 spring onions, finely chopped
500 g. various mushrooms, cut into medium pieces
500 g. noodles
Salt
Pepper
Method
1. In a frying pan, put the garlic, the bell pepper, the paprika, the sesame seeds, the dried coriander, the lemon zest and the pepper. Add the sesame oil and once it is well heated, turn off the heat and let the mixture cool. Add the peanut butter, the soy sauce, the sugar, the apple cider vinegar, mix well and set aside.
2. In a frying pan, put the sesame oil, the onion and the spring onions and cook over high heat until they wilt. Add the mushrooms, salt, pepper and sauté for 7-8 minutes. At the same time, boil the noodles according to the instructions on the package.
3. When the noodles are ready, transfer them to the frying pan with the mushrooms, add the sauce, mix and serve.
